The charmingly named Fuumi, which means “sense of flavour” in Japanese, is a Japanese brasserie which is inspired by enduring respect for the archipelago’s recipes and ingredients. Diners will be fascinated by the traditional teppanyaki which takes centre stage in the restaurant’s dining room. Behind this impressive grill, the chef creates delicious Asian dishes, including okonomyaki, tori no, kamo to onsen and Wagyu beef.

A pâtisserie which shares L’Axel’s concept
The latest addition to the addresses managed by Vanessa Blondeau and Kunihisa Goto, L’A Pâtisserie KG has become a firm favourite with locals in Fontainebleau for its delicious pastries. Although it might not be obvious to all, just like L’Axel, this pâtisserie revisits traditional French recipes by adding subtle touches of Japanese flavours. Deliciously inventive desserts are produced in its culinary laboratory, including the Paris-Tokyo, an original and surprising take on the traditional Paris-Brest pastry. Masterclasses on the art of dessert-making are held here because the chef is a firm believer in the importance of passing on knowledge.
