Kunihisa Goto is passionate about quality ingredients and works to elevate each and every one. For the chef, using local and seasonal ingredients is a matter of course. L’Axel sources as much of its high-quality ingredients in and around Fontainebleau as possible, while the legendary Japanese Wagyu beef on the restaurant’s menu comes from Japan.
